Vendakkai puli kulambu

Vendakkai puli kulambu:

Vendakkai puli kulambu is made using Vendakkai(ladies finger), termerind and few more ingredients. It is excellent in taste and we can keep it for 2-3 days and use it.

Ingredients for Vendakkai puli kulambu:

1.Ladies finger vegetable (Vendakai) -1/2kg

2. Tamarind -100 gram.

3. Fenugreek seeds powder -25 grams.

4. Tomato -2 small ( Cut into pieces)

Things required for seasoning:

1. Gingelly oil-100ml

2. Garlic – 15 cloves

3. Small onion -50 grams ( Pealed and chopped)

4. Red chili – 10 pieces ( cut each into two pieces)

5. Curry leaves -1 handful(Cut into small pieces)

6. Asafoetida – 1 table spoon

7. Salt – required amount

Things to be done before we start cooking:

Soak Tamarind in water for 15 minutes and squeeze the juice. Add some water and squeeze the juice till we get the waste of tamarind.

Keep this tamarind juice in a cup.

Cut Ladies finger vegetable(Vendakkai) into small pieces and keep it in other plate. If possible dry it in sun light for 5 hours to make it dry.

Preparation of Vendakkai puli kulambu:

Put soil pan in high flame stove. I strongly recommend soil pan for preparing puli kulambu. Because it enhance the taste of puli kulambu.

After soil pan heated for some time, add gingelly oil and heat it for some time. We are using gingelly oil instead of other oils because it enhance the taste and smell of puli kulambu.

After oil heated for some time add mustard, let it burst. Then add garlic cloves and fry till it turns light brown color.

After the garlic cloves turns light brown add red chili and curry leaves and fry it for some time.

Now, add Asafoetida, Fenugreek seeds powder and fry them.

Then add cut vendakkai and tomato. Add salt and turmeric powder. Fry it till the 3/4th of the slimy goes off.

Finally add tamarind juice with it and let it boil for some time till we get 3/4th of liquid state.

Add curry leaves and turn off the stove.

Now, our side dish to rice is ready to serve.:)

Durability of Vendakkai puli kulambu:

We have added tamarind, so it is durable for 2-3 days.

Ladies finger vegetable is rich in Vitamin A, Vitamin B and Vitamin C. It is supplement of fiber and folic acid.
