Tomato rice:

Tomato rice is a variety rice made using rice and tomato. It is delicious rice for lunch box and bring for breakfast/lunch/Dinner menu when we travel for long distance. This is durable for 12 hours.

Things required to make Tomato rice:

*Tomato -6 (well ripen fruits cut each into small slices)

*Rice – 1 kg

*Cardamom -4 pieces

*Cinnamon -1 inch

*Cloves -4

*Ground nut oil/Gingelly oil – 2 table spoon

*Mustard -1/2 teaspoon

*Curry leaves, coriander leaves – 1/2 handful each (Cut each into very small pieces)

* Garlic, ginger , red chili paste 2 table spoon.

* Big Onion -1 (chopped)

*Green chili- 5 ( slice them vertically each into 2 pieces)

*Salt – required amount

*Turmeric powder -1/4th of teaspoon.

*Cashew nut -10 pieces(Powder it well)

Preparation of Tomato rice using cooker:

Put pan in medium flame and let it heat for sometime.

Once pan get heated add the oil and let it heat.

Then add mustard and let it burst.

Add cardamom, cinnamon and cloves and fry it for a bit.

Now add onion, green chili , curry leaves and coriander leaves and fry until onion turns light brown.

When the Onion turns light brown, add the ginger and garlic paste and fry it until raw smell goes off.

Put the sliced tomatoes now and saute it until it becomes soft and smooth paste. Add turmeric and salt (required amount).

Finally add the rice and water. If it is Basmathi or seeraga samba rice then add 1.5 times the rice is. But for regular rice use 2 times the amount of rice is. Then add the cashew powder too to get rich taste.

Put the lid and let it leave for 3 whistles if it is regular rice. If it is Basmathi or seeraga samba rice then leave for 1 whistle and turn the flame to low and keep it for few minutes. Here is a tip to find whether it is cooked or not. Just sprinkle some water on bottom of cooker , if it goes of soon then immediately turn off the stove.

If the sprinkled water takes some moments to goes off then leave it for some time and repeat the process. When you find the sprinkled water goes off soon, then turn of the stove and leave the pressure goes off naturally in the cooker.

Then serve the Tomato rice with curd+onion combination would increase it’s taste.
