Coconut rice recipe:
Coconut rice recipe is a rice. It is one of the favorite dish of South Indians. It is prepared quickly for lunch box.
Ingredients of Coconut rice recipe:
1.Coconut 1- grated
2. Rice -2 tumbler (cooked)
Firstly cook the rice in cooker. To cook the rice clean the rice with water and soak for 10 minutes. Then add 4 tumbler of water and put lid and let it cook for 3 whistles.
Now, plain rice is ready to prepare coconut rice.
Things required for seasoning:
1.Pure ground nut oil -2 table spoon
2. Urad dal -1 tea spoon
3. Bengal gram dal -1 tea spoon
4. Green chili -5 (Cut each to two pieces)
5. Curry leaves -1/4 hanful(Cut into very small pieces)
6. Garlic and ginger paste- 1 table spoon
7. Salt -required amount
8. Mustard -1 teaspoon
9. Big onion-1 chopped
Things required for garnishing:
1. Coriander leaves -1/4th hanful(Cut into small pieces)
2. Cashew nut -50 grams ( Fried with ghee)
Preparation of Coconut rice recipe:
Firstly take the rice from cooker and let it cool until we prepare the seasoning for the coconut rice.
Secondly put soil pan in the stove and let it heat for some time. But add oil first. So, let it heat for some time and add mustard. But, wait till it burst.
Secondly add urad dal, bengal gram dal, garlic and ginger paste(Optinal) and green chili. But, fry till the green chili turns pale white. We are adding ginger garlic paste. As a result, taste increases to the coconut rice.
Thirdly add Onion and curry leaves then fry till Onion turns light brown.
But, turn off the stove now and add the grated coconut into the fry and mix them well by adding required amount of salt.
Finally add rice with this mixer then mix them well. Lastly add coriander leaves and cashew. Mix well. Most importantly add the cashew powder. Therefore, cashew would enhance the taste of rice.
Finally, coconut rice is ready to serve:) In addition, take this dish with mango pickle.Certainly, it gives excellent taste.
