Cauliflower rice

Cauliflower rice:

Cauliflower rice is made using rice, cauliflower and few spices. This rice lunch box and dinner special.

Things required for Cauliflower rice:

  1. Rice -2 tumbler
  2. Cauliflower -200 grams
  3. Cashew nut -25 grams (Powdered)
  4. Water -4 tumbler Or coconut milk -4 tumbler

Preparing coconut milk:

Grate 1 coconut and add 2 tumbler of water and grind it. Filter the water. Keep the water part separately. Then add 2 more tumbler of water with the residual of coconut and grind it then filter the water. The filtered water is the coconut milk to use.

Things required for seasoning:

  1. big onion -1 (chopped)
  2. Green chili-3 pieces
  3. Garlic, ginger and red chili paste -2 table spoon.
  4. Coriander leaves-1 handful( cut into small pieces)
  5. Mint leaves -1 handful (Cut into small pieces)
  6. Tomato-1 (chopped)
  7. Meal maker -5-10 pieces
  8. Ground nut oil-50 ml (0.11 lb)
  9. Ghee -50 ml
  10. Salt -required amount
  11. Turmeric powder-1/2 table spoon

Spices required to make Cauliflower rice:

  1. Cinnamon -1 inch piece
  2. Cardamom-3-5 pieces
  3. Cloves -3 pieces

Preparation of Cauliflower rice:

Step1: Firstly, take garlic cloves-50 gram, ginger -2 inch piece and red chili-7 pieces. Put them in mixie jar and grind them into a paste.

Step2: Secondly, put cooker in stove, add ground nut oil and ghee. But, heat the pan for some time.In addition, add all spices Cinnamon, Cardamom and cloves. After few seconds add the onion and chili.So, fry until the onion turns medium brown.

Step3: Secondly add garlic, ginger and chili paste into the pan. And fry until raw smell of garlic goes off. Next add the required amount of salt and turmeric powder.

Step4: Then add tomato, mint leaves and coriander leaves. so, let’s fry till tomato cook well.

Step5: In addition, add cauliflower and meal maker and fry them with the paste for 2 minutes. When we fry them to the spices completely mix with Cauliflower and meal maker. So, that would give excellent taste to rice.

Step6: Finally add rice and water or coconut water. Lastly, add cashew nut powder too and mix them well. Add the required amount of salt to taste. Then put the lid and leave it for 3 whistles if you use normal rice.

The Cauliflower rice is ready to taste. If we add coconut milk instead of water gives star hotel pulav rice taste with natural ingredients. And Cashew nut powder would give awesome taste:

Important note:

Most importantly, if you use seeraga samba rice or Basmati rice, use the 1.5 tumbler of water for 1 tumbler of rice. That’s if you use 2 tumbler of rice use 2*1.5=3 tumbler of water. When using this rice, leave the cooker for 1 whistle and put the flame in low and leave it for 1 or 2 minutes then turn off the stove.
If you use ordinary rice, use 2 tumbler of water for 1 tumbler of rice. Leave for 3 whistles. Ordinary rice take some time to cook well.

Now, leave the pressure to go off naturally. Finally, our cauliflower rice is ready to serve.

So, Side dish to Cauliflower rice is onion with curd.

Preparation of Onion with curd:

Most importantly, take 2 big onions and chop into small pieces. Rinse the chopped onion with water. Drain out the water completely. Finally, add this onion with curd and serve it as side dish.
